Creamy breakfast rice with berries

When I was growing up my parents use to make a version of this for us and I loved it! As I grew up and got out on my own, I forgot about it. It was only when I my own kids that I remembered it and how easy and delicious it is! This creamy breakfast rice with berries is so good! My kiddos loove it!

It is also filling! So I like to make this when we have a busy day ahead and it will hold the kids, and myself over longer than our usual breakfast.

To Start:

First, you will want to choose what kid of rice you want to use. I prefer Basmati rice, you can even use left over rice! This is perfect for those times when I don’t know what to do with the plain rice left over from dinner the night before.

You then will want to cook the rice according to the directions. Once the rice is cooked, you can then start to add all of the other ingredients. I start off with the milk first and add it in slowly to make sure the rice can absorb it well enough to get the consistency I like. I want it to be creamy, not super dry or soupy. Then I add the butter the same way. A little at a time and make sure it all melts and doesn’t make it too soupy.

The next step

Once the milk and butter are fully incorporated and you have you desired consistency, you then add in the sweetener of your choice and vanilla. Put the rice in a dish to serve and top it with a little butter, cinnamon to your liking, and whatever berries you would like. Serve while it is hot!

If you do not want to use sugar, honey and maple syrup are a great substitute. You can also use frozen berries if you don’t have any fresh on hand. I have even placed some homemade jam on top and that is awesome too. you just want to watch out for the extra sweetness if you use jam!

Equipment

  • 1 large pot

Ingredients
  

  • 1 cup batismi rice or any rice of your choosing
  • 2 cup water
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup honey or choice of other sweetner
  • 1 cup berries fresh of frozen

Instructions
 

  • start buy cooking your rice per the instructions.
  • once the rice is cooked, slowly add in the milk and add until you are satisfied with the texture of the rice. You may not need all of the milk.
  • Add the butter next. same as the milk, just add to your taste preferences.
  • Next, add the sweetner of your choice. Raw honey or maple syrup are good choices.
  • once all ingredients are fully incorporated, serve in a bowl, topped with cinnamon, or nutmeg, a little butter and top with the berries.
