This easy and delicious potato side dish is such a great addition to add to any meal! The best part is, you can use left over potato’s for it! I used the left over baked potato’s that I had, But you can do this with pretty much any type of left over potato.

We had bought baking potato’s From Sam’s and they were HUGE! I’m talking like 3 pounds a piece! Needless to say, I made about three too many, so I had to figure out what to do with them.

What to serve this with?

This side dish can be served with almost anything! A Nice roasted chicken, pork loin, even a nice steak. MMMMM….. steak. Anyway, I had served these one night with bratwursts, It was a great replacement for the mac & cheese we usually do as a side. I served It with a yummy sour cream sauce that you can find here.

Easy potato cakes

Cooked In coconut oil

These potato cakes are cooked in coconut oil. So they are a little less guilt free…? That being said, you can cook these in whatever kind of oil you prefer. I choose coconut oil because of it’s high smoke point and I try to stay away from all of the seed and veggie oils.

Frying Time!

You will want to make sure that your pan and your oil is hot enough to get these cakes nice and crispy. Otherwise they will stick and then be a mushy mess. You will be able to tell immediately if it is not hot enough. If it doesn’t sizzle when you place the potato cake in the pan, it needs to be hotter. Once The oil is hot enough, the cakes only take a couple minutes each side to brown up nicely!

quick sour cream sauce

Easy crispy potato cakes

This make a great side dish to any meal, and a great way to use up left over potatos

Ingredients
  

  • 3 very large potatos already baked
  • 1 cup shredded cheddar cheese or cheese of your choice
  • 1 egg
  • 1/2 cup Milk
  • 2 tbsp coconut oil or oil of your choice
  • 1 1/2 tbsp dry minced onion
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • salt and pepper to taste

Instructions
 

  • scoop out all of the of the potato from the potatos that were previously baked, and put into a large bowl.
  • mash the potatos up well and add all of the ingredients to them.
  • Mix all of the ingredients well.
  • heat a pan up to med-high with the coconut oil in it.
  • take a 1/4 cup of the potato mixture and shap into a cake
  • add to the hot pan and cook until crspy and brown
  • serve while hot

Notes

You can use any kind of leftover potato you like, mashed potato’s work well for this recipe also.
You can use any oil as a substitute for the coconut oil.  I prefer coconut oil because of it’s high smoke point.
