I love granola! It is a sweet treat that I can eat without feeling guilty about it, especially now that I make it in my own kitchen! This easy to make homemade granola is a staple in our kitchen now. We have it as a topper on our homemade yogurt, you can find that recipe here, as a snack by its self with dried fruit, or as cereal.

So, why do I make Homemade granola instead of buying it?

As with most things here on the farmstead, we like to do as much as we can ourselves. We also like to know what goes into our food. So the fact that I can control what goes into this granola is a major factor. if you make your own granola, you can add whatever you like to it! Like dried fruit, whatever your favorite nut is, nut butters, and even different spices like nutmeg or allspice.

What is in my homemade granola?

The first ingredient I use is coconut oil. You will want to use some sort of oil to keep the granola from drying out when you bake it. I use a good organic coconut oil because I like the flavor of it with the granola. I then use old fashioned rolled oats because, well, is it even granola without oats in it? I then add cinnamon, some pecans, shredded coconut, pepitas, a little bit of salt, and raw honey to sweeten it up.

On to the making of Said granola!

So, to start you can throw most of the ingredients into one bowl. I use 2 cups of old fashioned rolled oats, 1/2 teaspoon of cinnamon, 1/2 cup of pecans, 1/4 cup of pepitas, 1 cup of shredded coconut, a dash of salt, and 1/2 cup of raw honey. I use 2 tablespoons of coconut oil and melt it down and throw it into the bowl also. Stir everything up, and BAM! its ready to go into the oven to be toasted!

Onward to the Oven

Now, to toast the granola. Preheat your oven to 350°. You will want to put the granola on a sheet pan lined with parchment paper. Put your granola onto the pan as spread out as you can get it. You will want to take the granola out at certain points to stir it around and spread it out again to make sure it toasts evenly. I put in in for 8 min first then stir it around, then set the timer for 3 minutes, stir, and then another 3 minutes, stir and then 2 more minutes. This is just the perfect amount of toastiness ( is that even a word?) for me. Be careful if you want it to be toasted more at this point, it will quickly burn at this stage so make sure you keep a close eye on it! Once it cools a bit, I like to add a bit of chocolate to it!

Homemade Granola Made Easy

Ingredients
  

  • 2 tbsp coconut oil organic
  • 2 cups old fashioned rolled oats
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 cup raw honey
  • 1/4 cup pepitas pumpkin seeds
  • 1/4 cup semi sweet chocolate chunks
  • 1/2 tbsp cinnamon
  • dash salt

Instructions
 

  • preheat oven to 350°F
  • melt the oil
  • mix all of the dry ingredients, except for the chocolate, into a bowl
  • stir well
  • mix the oil and honey into the dry ingredients
  • stir together until fully incorporated
  • line a baking sheet with parchment paper and spread the uncooked granola in an even layer
  • bake for 8 minutes then take out and stir, spread the granola back out
  • bake for another 3 minutes, stir again and spread the granola back out
  • bake for another 3 minutes and stir, spread the granola bake out and bake for another 2 minutes.
  • let the granola cool for 5 minutes and stir in the chocolate chuncks

Notes

You can customize this to your own taste. You can use different nuts, or substitute seeds. You can also add dried fruit or sweeten with maple syrup or brown sugar instead of honey. You can toast this for longer in the oven if you prefer a crunchier granola.
