This one pot dinner is sure to be a hit with the whole family!
This dinner has quickly become one of our families favorite dinners. It is super delicious, and it is very easy to make. It also only takes one pot, so that is a major bonus, less dishes! Who doesn’t appreciate that!
I threw this together one evening a couple summers ago after a very long day in the garden. I was beat after that day and the last thing I wanted to do was make dinner, but alas, the people needed to eat. It is super quick to throw together, I don’t feel guilty feeding to my family because it is nutritious, and it fills all of the bellies up!
On with the making of said dish
The recipe that is below is for our family of seven, so you may want to half it or cut it down if you do not need to feed that many people.
Start off by heating a pan or pot up and add either butter or a good olive oil, just a tablespoon or so. Enough so that your ingredients don’t stick to the pan. While the pan is heating up, dice up the sweet peppers or bell peppers. The more colorful, the better! Dice up your onion as well. The onion should be a sweeter onion too.
Once the pan is heated up, throw in the peppers and onions and let them start to soften up. Next, mince p the fresh garlic and add that to the pepper and onion mixture, throw in a pinch of salt at this point and let everything sweat together for about a minute or so.
Once the pepper mixture is softened to your liking, add in the Italian sausage and let it brown all the way through.
The next step!
After the sausage is cooked, you want to add the orzo pasta. You can also use rice if you prefer. I just really like the texture of orzo pasta, and I think that it is better than rice in this dish.
At this point, I stir the orzo in nicely and let it somewhat cook with the other ingredients before I add the broth. Once I am liking how the pasta looks, I then add my broth in. Now, I do not strain the broth off once the pasta is cook, so you want to be careful to not add too much broth so that the dish doesn’t turn out soupy. Unless of course you want it to be more like a soup! It takes about 9 minutes for the orzo to be al dente.
Almost done!
The last step is to salt and pepper to taste, cut up some fresh sage, and shred some fresh parmesan cheese. Toss it all together with the sausage mixture, and the dish is ready to be served!

One pot sausage and orzo pasta with peppers
Ingredients
- 1/2 diced red bell pepper
- 1/2 diced yellow bell pepper
- 1/2 yellow onion
- 3-4 cloves minced garlic
- 2 Lbs Italian sausage
- 4 cups beef broth
- 2 cups orzo pasta
- 1 cup fresh shredded parmesean
- 1 tbsp fresh chopped sage
- 1 tbsp olive oil
- salt and pepper to taste.
Instructions
- Start by heating your pan up and adding the olive oil to the heated pan
- Add the diced peppers and onions and sautee them.
- add the garlic to the pepper mix and cook for one minute.
- add the sausage to the pan and let it brown throughly and break it up nicely
- once the sausage is all cooked, add the orzo and stir in.
- add salt and pepper to taste
- add the broth to the pan, and bring to a low boil
- let the pasta cook for about 9 min for al denta
- add the fresh parmesan and the fresh sage
